Job Description:

–              Must have experience as a Senior Chef

–              Strong managerial skills

–              Supervises Chef de Partie, Cooks and all other kitchen staff

–              Strong cooking skills

–              To have total accountability for the day to day running of the kitchen service in the absence of the Head Chef

–              In conjunction with the Head Chef, supervises and checks the quality and quantity of food served.

–              Assists the Head Chef with menu planning, food planning, food purchasing, and food cost control and various other assignments i.e. menu pricing, banquets, functions, etc.

–              Assist the Head Chef in discipline of all staff

–              Responsible for the cleanliness and hygiene of the entire kitchen

–              Ensures that food cost is within budget

–              Ensures that all staff members receive continuous on-the-job training

–              To assist in fully establish a food and beverage control system and ensures daily, weekly and monthly stock takes are taking place

–              Purchases food items and checks upon delivery as to quality, quantity and prices
